Stuffed Chicken, Garlic Mashed Potatoes



You need:
red potatoes
garlic (minced)
butter
mayo
milk
chicken breasts
shredded mozzarella cheese
crab meat
mushrooms
asparagus
avocados
guacamole mix
salt
pepper
oregano

Mash some ripe avocados and mix with the guacamole mix (sometimes I get lazy). Add some lemon/lime juice if you want. Set aside for 30 minutes.

Dice the asparagus and mushrooms. Chop the potatoes into eighths (this allows the potatoes to cook a little faster). Boil the potatoes until soft. While the potatoes are boiling prepare the chicken.

Cut a pocket into the chicken. This is hard to describe in words so use your best judgment. I cut a slit into the top of the breast and then slice through the sides of the slit (cutting into the breast length-wise). In a bowl, mix the vegetables, some crab, garlic, oregano, parmesan, and butter. Stir until the butter is mixed well (almost whipped). Stuff into the chicken. Prepare a baking sheet, and bake the chicken at 375 for about 20-25 minutes.

When the potatoes are done drain them and place into a bowl. Add salt, pepper, garlic, butter, mayo, the rest of the crab, and milk and mash together. Add ingredients depending on how many potatoes you made.

Arrange the chicken and potatoes with some guacamole on the side for the chicken. Enjoy!
